I have been using a bench scraper to top off my chocolates, however, I saw a MOF french chef use something that looked like it belonged in my dad's workshop; yet, he moved with such ease and grace, and he moved quickly. Sure enough, I found this dough scraper that resembled the French Chef's tool, and ordered it.I love it! I have so much more control over my chocolates than ever before. The bench scraper wasn't ergonomically beneficial for the specific task for topping off chocolates. This thing makes my life easier. Is it a must in every kitchen? No. But, if you want to take your skill to the next level, I would highly recommend this affordable product.
