Biscuits are much loved in my family. I have been using my mother's old biscuit cutter, and it seems to be coming apart, so I decided to put it to rest and get a new set. I looked at the reviews, and found this RSVP Stainless Set to be the best. It has ribbed edges for the most delectable biscuits. In fact, I think my biscuits may be lighter and higher using this set. Though I am using a new recipe, and that may be the reason, but whatever it is, these are the best biscuits I have made.It is strawberry season here, and in my family we used biscuits as the base for our strawberry shortcakes. Add more sugar if you want a little sweeter biscuit, but I love them, just as they are. These can be washed in the dishwasher or by hand. I like to use the largest cutter, but my granddaughter favors the small cutter, so we are all set in this family. Enclosed is a recipe from The New York Yimes that makes light, high biscuits.The New York Times BiscuitsINGREDIENTS2 cups all-purpose flour, plus more for dusting2 tablespoons baking powder1 scant tablespoon sugar1 teaspoon salt5 tablespoons cold, unsalted butter, preferably European style1 cup whole milkNutritional InformationPREPARATIONPreheat oven to 425. Sift flour, baking powder, sugar and salt into a large mixing bowl. Transfer to a food processor. Cut butter into pats and add to flour, then pulse 5 or 6 times until the mixture resembles rough crumbs. (Alternatively, cut butter into flour in the mixing bowl using a fork or a pastry cutter.) Return dough to bowl, add milk and stir with a fork until it forms a rough ball.Turn the dough out onto a well-floured surface and pat it down into a rough rectangle, about an inch thick. Fold it over and gently pat it down again. Repeat. Cover the dough loosely with a kitchen towel and allow it to rest for 30 minutes.Gently pat out the dough some more, so that the rectangle is roughly 10 inches by 6 inches. Cut dough into biscuits using a floured glass or biscuit cutter. Do not twist cutter when cutting; this crimps the edges of the biscuit and impedes its rise.Place biscuits on a cookie sheet and bake until golden brown, approximately 10 to 15 minutes.Highly Recommended. prisrob 06-27-15I have used many a heart-shaped cookie cutter in my day, but these are the BEST by far! I bought a second set for my sister...we both have grandkids, and there's nothing better than serving cookies, biscuits, sandwiches...and the list is endless... Thank you for such a great product!I bought these well over a year ago and they have lasted in new condition. Absolutely perfect for cutting large to small sized square shaped biscuits. I've only used them for biscuit cutting and they cut through the dough very effortlessly. And they are all nice and tall with high handles so if you want really BIG and FAT biscuits you can easily cut them out. I love that you can get so many more biscuits out of one layer of dough since they are square and I'm able to cut side by side with not nearly as much excess dough as round biscuit cutters leave. And the fluted shape adds a neat texture to final product. Super easy to clean and I wash mine by hand but you can put them in the dishwasher. Mine have not rusted at all yet and hopefully never will. And since they stack inside each other they take up very little space to store. I still keep mine in the box they came in. These are the best biscuit cutters I've ever used.One of the things about making biscuits is that you aren't supposed to handle the dough very much. When you use a round biscuit cutter there are a bunch of scraps left over. Some people simply bake the scraps as is, but there is usually enough for a few more biscuits. I, as I was instructed by Nathalie Dupree in a community class I took from her, pile them on top of each other, roll, and cut more biscuits. I don't like waste, and this still leave you with scraps and cut biscuits that are tougher than your original ones. That's just the facts, ma'am. So having very little leftover dough because you are cutting squares that overlap is really perfect for biscuits making.PROS: The set of cutters easily nest within each other taking up very little drawer space. They can fit in my drawer without having a problem closing the drawer. Four sizes is perfect, the smallest being a nice size for a petit four. Deep cutter, so they can be used for thicker food products like brownies or cake or sandwiches. Very little waste when using squares, which means you handle your dough one time and have very few scraps to either roll together or just bake as is. No rusting so far, we've run them through the dishwasher.CONS: I simply do not have any. These are perfect.I bought these square biscuit cutters because I often make my own rolls from scratch and I needed something to assist me with cutting out the rolls from the dough. I used to just use the top of a cup or a round plastic cookie cutter, but neither were sharp enough and both took a lot of effort to get it to cut through the dough. These different size square metal cutters work great! I figured with them being square I would be able to utilize more of the dough before having to re-roll it, so in essence there would be less waste or a smaller hough cake. With the different sizes to choose from, I am happy to report, I found that to be the case. :) I definitely had less dough to roll after my first rolls were cut out. They also came in a neat little box that I now keep them stored in on my shelf. And of course, as the product indicated, they are stackable.My daughter needed square cookie cutters for a fondant cake design. She gambled on these mega sturdy cutters and was quite pleased. They cut sharply. The open top allows the user to push the fondant (or anything else) out of the cutter, if it is stuck. The handles are a definite plus. So far, we have not observed any issues involving rusting ... but then again, we take good care of our metal cookie cutters to avoid such a thing, if it even were a possibility. Upshot: strongly recommended!Excellent product! Great size ranges and as S/S, dishwasher proof, very good quality.
