I was a baker for 20 years. This tool is not for heavy duty work like in a bakery. the lock is weak. the spread will move on you very easy.BUT, for the money, this is a great light duty tool.But with all that said. If you work in a small diner that makes their own pies from scratch, (like me these days) This is the tool for you. If you make pies and such at home, this is the tool for you.
