Folding is not only less labor intensive, but it also gives the crumb of the finished bread a better structure and a nicer network of holes (which are a good thing in the artisan bread world!). Punch, knead, fold! After punching down, kneading, folding, and stretching your dough, you will portion out the dough into serving sizes or loaves. You get it ready for its final proof by putting it into its final shape. Now for the proofing! Place the shaped dough into your banneton basket, cover with towels and perform a shorter second rise at room temperature or in the refrigerator. During this time, the loaves should nearly double in size. Bake, slice and um-mm! Time for the oven bake or Dutch Oven. I have made sourdough bread in the past, but I have never used all of these latest "gadgets." I didn't see any Kraft Gift Box in my package, so I can't say what that was for. I have never used the Bannetons before so this was a new experience for me. Because I had read up on how to use these, I understood that they need to be seasoned with a gluten free type of flour before they are used. I had rice flour, so I used that to season mine.I was pleased with the quality of all of the products. In looking at other people's reviews, it appears that some of them did not receive all of the products in their kits. I was very careful when unpacking mine and the only thing that I noticed was that the Kraft Gift Box was not included. I also didn't happen to see a QR code for the instruction manual PDF, but I contacted the company so I am hopeful that they will send me that.The stencils are cute, although I am not certain that I will used them for my bread, but I can use them with other things. I already had a Silicone Baking Mat, and those things are wonderful with the size guidelines on them and they clean up so easily. I really like the silicone hand brush. Just putting a bit of dish soap on it, it becomes a nice cleaning tool. The bread scoring lame and extra blades took a bit of getting used to, but once again, they are easy to use and I am so glad that there is a leather cover for the blades to keep from cutting fingers! The cotton bread bag is nice and so is the Danish Dough Whisk. I had wanted one of those for a while. They are a great tool for baking. The Bannetons make two nicely shaped breads for baking and teh metal scraper is what I use for cutting the dough into pieces. The plastic bowl scraper is nice to use for cleaning up the bowl.Overall, this is a great kit and it is priced fairly as well. I feel that some of the people who posted such negative comments either didn't take the time to try this or did not contact the company with any concerns that they had.I like the kit and I would recommend it for a gift or for yourself if you do sourdough baking for yourself.
